Roast Potatoes using Silver Hill Duck Fat

Once you start using duck fat for your roast potatoes you will never make them with anything else again.
Serves 2

Method

Preheat oven to 220°C. Peel the Desiree or Pontiac potatoes.

Place potatoes in a large saucepan and pour over boiling water.

Cook for six-eight minutes over medium heat.

Drain.

Return the potatoes to the pan place a lid on the pan and shake vigorously (this roughs up the surface).

Season with sea salt.

Heat the Silver Hill Duck Fat in a baking tray, add potatoes to the tray and roast, turning occasionally, for 40-50 minutes.

Season with salt and serve immediately.

Ingredients

400g. of your chosen Potato – we like roosters.
Sea Salt.
100g - Silver Hill Pure Duck Fat.
